In the kitchen of Franco Bowanee there is a harmonious blend of fine French products including some directly from the garden of the Castle and spices from the Island of Mauritius.
Franco did his trainingwith Nizam Peeroo in Port Louis, Mauritius,
He entered the Château de Vault de Lugny in 2008, internships with Paul Bocuse in Collonges au Mont d’or.
In 2013, the restaurant of the Château de Vault de Lugny integrates the College Culinaire de France.
A semi-finalist in the contest MOF in 2014 and in 2018.

Karina in between as Head pastry Vault de Lugny in 2009. She has worked with the chief of Nizam Peeroo, has developed his talents at the Chocolatier Nicolas NOZ as well as from Hervé Boutin MOF.
It participates in the events of the contest MOF, optional ice creams, sorbets, ice-creams in 2017 and will be the first woman to submit to this contest.
Etoilée Michelin 2019, it is part of the small circle of the 33 women starred Michelin. She was selected for the Regional finals of the Championship of France of the Dessert.
She was elected as head pastry chef of the year 2024 by the Gault Millau Bourgogne Franche-Comté.
Karina loves to work out the products of the orchard, and the flowers of the season, adding a bit of exoticism to his country creating amazing desserts.
